In 2005, the Amalfi Coast-born Poto founded in Los Angeles, together with chef Michael Cimarusti and Cristina Echiverri, Providence, an upscale dining establishment where his zeal for food, his warm personality and attention to detail, resonating in every aspect, turned this eatery into a two Michelin stars restaurant.

In 2013, Poto partnered again with Cimarusti in Connie & Ted’s, a West Hollywood restaurant serving a more casual, New England-inspired seafood menu.

He continued in his quest for food by Partnering up and opening Pesce Cucina in the Eataly LA, Best Girl restaurant in the Ace Hotel, and the fish market Cape Seafood and Provision.
